Back-to-School Snacks for Kids: 5 Easy Recipes They'll Actually Eat

Back-to-school means busy mornings, packed lunches, and hungry kids coming home from school ready to eat everything in sight. These are five of my favorite kid-approved snacks that are simple to make, made with wholesome ingredients, and perfect for lunchboxes, after-school snacks, or meal prep.

The best part? Most of these can be made ahead of time, so you can spend less time in the kitchen during the week.

1. Oat Energy Bites

These no-bake energy bites are one of my favorite snacks to keep in the refrigerator. They're packed with protein, healthy fats, and whole-grain oats to help keep kids full between meals.

Ingredients

  • 2 cups gluten-free oats

  • ⅓ cup honey

  • ½ cup peanut butter

  • ½ cup mini dairy-free chocolate chips

  • ¼ teaspoon salt (optional)

Instructions

  1. Mix all ingredients together in a large bowl.

  2. Roll into bite-sized balls.

  3. If the mixture feels sticky, refrigerate for 10 minutes before rolling.

  4. Chill for at least 30 minutes before serving.

  5. Store in the refrigerator for up to one week.

Rubybyrds Tip: Spray your measuring cup (and your hands) with a little cooking spray before measuring the honey and peanut butter. It makes cleanup so much easier!

2. Homemade Strawberry Fruit Roll-Ups

These homemade fruit roll-ups are made with just two ingredients and are a fun way to use strawberries before they go bad.

Ingredients

  • 8 oz fresh strawberries

  • 1–2 tablespoons honey

Instructions

  1. Blend strawberries with the honey until smooth.

  2. Pour onto a parchment-lined baking sheet.

  3. Spread into a thin, even layer.

  4. Bake at 150°F for about 8 hours, or until the fruit leather is dry and no longer sticky.

  5. Cut into strips and roll up.

Store in an airtight container for an easy grab-and-go snack.

3. Perfect Easy-Peel Hard-Boiled Eggs

If you've ever struggled to peel hard-boiled eggs, this method works every single time.

The Secret: Always bring the water to a full boil before adding the eggs.

Instructions

  1. Bring a pot of water to a full boil.

  2. Carefully lower each egg into the boiling water.

  3. Reduce the burner to medium heat.

  4. Cook:

    • 8 minutes for softer eggs

    • 9 minutes for the perfect jammy center

    • 10 minutes for fully cooked yolks

  5. Immediately transfer eggs to a bowl of cold tap water.

  6. Let sit for at least 20 minutes before peeling.

Bonus Tip: Older eggs peel much more easily than very fresh eggs.

Perfect for school lunches, breakfast, or meal prep.

4. Apple Donuts

One of the easiest healthy treats that always feels a little extra special.

Ingredients

  • Apples

  • Peanut butter (or almond butter or Nutella)

  • Toppings such as:

    • Mini chocolate chips

    • Granola

    • Sprinkles

    • Honey

    • Flaky sea salt

Instructions

  1. Slice apples into rounds.

  2. Remove the center with an apple corer or small cookie cutter.

  3. Soak apple rings in salt water for about 5 minutes to prevent browning.

  4. Rinse and pat completely dry.

  5. Spread with peanut butter.

  6. Add your favorite toppings.

My favorite combination is peanut butter, a drizzle of honey and a tiny pinch of flaky sea salt.

5. Homemade Mini Pizza Bagel Bites

Skip the frozen version and make a batch yourself. These freeze beautifully and are perfect for lunch thermoses or quick dinners.

Ingredients

  • 12 organic mini bagels

  • 8 oz can organic tomato sauce

  • 8oz shredded mozzarella cheese

Instructions

  1. Slice mini bagels in half.

  2. Spread each half with tomato sauce.

  3. Sprinkle with mozzarella cheese.

  4. Freeze on a baking sheet until solid.

  5. Transfer to a freezer-safe bag.

To Bake

Bake straight from frozen at 350°F for 10 minutes, or until the cheese is melted and bubbly.

For school lunches, bake in the morning and pack them warm inside a thermos.
