Stop packing plain cheese quesadillas! Try these 3 hearty, filling lunchbox recipes instead.
My Lunchbox HERE.
I love packing quesadillas in my kids' lunchboxes because they're quick, easy, and something my kids actually enjoy eating. But instead of packing plain cheese quesadillas, I like to add a few simple ingredients to make them more filling, nutritious, and satisfying.
These three easy recipes take a basic tortilla and turn it into a more substantial lunch with ingredients like eggs, spinach, beans, and cheese. They're packed with protein, and some add fiber and veggies, helping keep little bellies full throughout the school day.
They're also easy to make with ingredients you probably already have in your kitchen!
Recipe 1. Breakfast Quesadilla with Eggs, Spinach & Cheese
Breakfast for lunch is always a hit! This hearty quesadilla combines fluffy scrambled eggs, spinach, and melted cheese for a protein-packed lunch with some added greens.
Ingredients
1 whole wheat flour tortilla
2 eggs
¼ cup chopped spinach
½ cup shredded sharp cheddar and Monterey Jack cheese
Pinch of salt
Butter or olive oil for cooking
Instructions
Whisk the eggs and spinach with a pinch of salt.
Heat a lightly greased skillet over medium-low heat and add the egg mix and gently scramble until cooked through.
Remove the egg mixture from the skillet.
Place the tortilla in the skillet and sprinkle the shredded cheese over tortilla.
Cook over med-low head until cheese melts and tortilla is golden
Add the scrambled eggs and spinach, then fold the tortilla in half.
Let cool slightly, slice into wedges, and pack in a lunchbox.
Why I love it: The eggs and cheese provide protein, while the spinach adds extra nutrients. It's an easy way to turn breakfast ingredients into a satisfying lunch. Pack with fruit, cherry tomatoes, and sour cream, salsa, or guacamole.
Recipe 2. Bean & Cheese Roll-Ups
These crispy little roll-ups are one of my favorite ways to make a filling lunch with just three ingredients! Refried beans provide fiber and plant-based protein, and the melted cheese makes them extra delicious.
Ingredients
2 flour tortillas
½ cup refried beans
½ cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
Butter or olive oil for cooking
Instructions
In a small bowl, mix the refried beans and shredded cheese until combined.
Cut each tortilla in half to create four half-circle pieces.
Divide the bean and cheese mixture evenly among the four tortilla halves, using approximately ¼ of the mixture per piece.
Roll each tortilla half tightly around the filling.
Use a little extra refried beans along the edge of each tortilla to help "glue" it shut.
Heat a lightly greased skillet over medium-low heat.
Place the roll-ups seam-side down in the skillet and cook, turning occasionally, until the tortillas are golden brown, the filling is warmed through, and the cheese is melted.
Allow to cool slightly before packing.
Why I love it: Beans are an easy way to add fiber and plant-based protein to lunch. These roll-ups are simple, satisfying, and perfect for little hands. Serve with tortilla chips, guacamole, and carrot sticks.
Recipe 3. Pizza Quesadilla
All the flavors of pizza packed into a crispy tortilla! This easy lunchbox recipe combines mozzarella, pepperoni, bell peppers, and pizza sauce for a more substantial take on a classic cheese quesadilla.
Ingredients
1 flour tortilla
⅔ cup shredded mozzarella cheese, divided
1 tablespoon finely chopped green bell pepper
5–6 slices pepperoni
¼ cup pizza sauce
Butter or olive oil for cooking
Instructions
Heat a lightly greased skillet over medium-low heat.
Place the tortilla in the skillet and sprinkle ½ the mozzarella.
Add the saucem chopped bell pepper, and pepperoni.
Sprinkle remaining cheese on top
Cook for 2–3 minutes until golden brown and the cheese has melted, then fold in half.
Let cool slightly before slicing into wedges.
Why I love it: This quesadilla offers protein from the cheese and pepperoni, plus a little extra nutrition from the bell pepper. It's a fun way to pack familiar pizza flavors in a quick homemade lunch. Serve with fruit and veggies.
Tips for Packing Quesadillas in Lunchboxes
Let them cool before packing. Place cooked quesadillas on a wire rack for a few minutes to allow steam to escape and help prevent sogginess.
Cut into easy-to-eat pieces. Wedges and roll-ups are great for kids because they're easy to hold and dip.
Customize the ingredients. Add extra vegetables, swap the cheeses, or use whole wheat tortillas for additional fiber.
Pair with nutritious sides. Fresh fruit, crunchy vegetables, and dips can help round out the meal.
